Glutendtrotters is a personal blog written by a family that travels with celiac disease. We share what we learn along the way as honestly and carefully as we can, but it is important that you understand what the information here is and what it is not.

1. The content is informational

Everything published on glutendtrotters.com is informational and for general guidance. It reflects experiences, opinions and enquiries made at a specific point in time, and it does not replace individual professional advice, whether medical, nutritional, legal, financial or of any other kind.

Reading this blog does not create any professional, therapeutic or contractual relationship between you and the people who write it.

2. Health and celiac disease: please read carefully

Celiac disease is an autoimmune condition whose only recognised treatment is a strict, lifelong gluten-free diet. Diagnosis and follow-up are exclusively a matter for healthcare professionals.

  • We are not doctors, registered dietitians or healthcare professionals. We do not diagnose, treat or provide clinical guidance.
  • Do not start a gluten-free diet on your own if you suspect you may be celiac. Doing so before diagnostic testing can distort the results and make diagnosis harder. Talk to your doctor first.
  • Everyone is different. Tolerance, sensitivity and reactions to traces vary from person to person. What works for us may not work for you.
  • If you have associated conditions, food allergies or are following any treatment, always check with your healthcare professional before applying anything you read here.

If you think you are having an adverse reaction, seek medical attention. In an emergency, call 112 within the European Union, or the emergency number of the country you are in.

3. Restaurants, venues and cross-contamination

When we mention a restaurant, bakery, hotel or any other venue, we do so based on our experience during a specific visit or on the information the venue itself gave us at that time.

That carries some important caveats:

  • A mention is not a certification or a safety guarantee. We do not audit kitchens, test food or verify internal procedures.
  • Venues change: staff turnover, new suppliers, new menus, new owners or new protocols. What was safe when we visited may not be safe today.
  • Always check on the spot. Before eating, ask directly about gluten handling, cross-contamination and ingredients. Make it clear that this is a medical condition, not a preference.
  • Distinguish between a 100% gluten-free venue, one with external certification, and one that simply offers gluten-free options. The level of risk is not the same, and we try to make this clear whenever we know.

In the European Union, the “gluten-free” claim on food labels requires a gluten content of no more than 20 mg/kg (20 ppm), under Commission Implementing Regulation (EU) 828/2014. That threshold is safe for most people with celiac disease, but it does not mean a complete absence of gluten, and some particularly sensitive individuals may still react.

The final decision about what you eat is always yours, and at your own risk.

4. Recipes

Our recipes are tested in our own kitchen, but we are not professional chefs or nutritionists. Please bear in mind that:

  • You must check the label of every ingredient you use. Formulations change, and a product that was gluten-free may no longer be.
  • If you cook in a shared kitchen, take extra care with cross-contamination: utensils, surfaces, frying oil, toasters and airborne flour.
  • The recipes are not designed for specific therapeutic diets and do not account for other allergies or intolerances you may have.
  • Any nutritional information given is an estimate, for guidance only.

5. Travel information

Prices, opening hours, itineraries, access conditions, entry requirements, transport fares and availability mentioned here reflect the moment each article was written or updated, and may since have changed.

Before booking or travelling, always verify the details with official sources: tourism boards, transport operators, the venues themselves and, for entry, health or safety requirements, the official travel advice issued by the competent authority in your country of residence.

We are not a travel agency or an intermediary: we do not organise, sell or manage trips, and we play no part in the contractual relationship between you and any provider you book with.

6. Advertising, affiliate links and transparency

This blog is funded through advertising and affiliate links. If you book or buy through one of our links, we may earn a commission at no extra cost to you.

To be clear about what that means:

  • Commissions do not influence what we recommend. We recommend what we would use ourselves.
  • We are not responsible for third-party services you book through those links: the contract, service quality, cancellations and complaints are governed by the provider’s own terms.
  • Sponsored content and commercial collaborations are always clearly identified within the article itself.
  • The ads you see are served by third-party ad networks. We do not select or endorse the products advertised and we do not control their content.

Full detail is available in our Legal Notice.

7. Opinions, comments and third-party content

The opinions expressed in articles are the personal views of the author. Reader comments reflect only the opinion of whoever wrote them: we do not endorse them and we cannot guarantee their accuracy, particularly where they concern specific venues or health matters.

Nor are we responsible for the content of third-party websites we link to, or for changes they make to their services or policies.

8. Use of artificial intelligence

We use artificial intelligence tools to assist with research, drafting, translation and editing. All content is reviewed and validated by a person before publication, with particular care where celiac disease, cross-contamination and food safety are concerned. Editorial responsibility always rests with a human.

9. Limitation of liability

You use the information on this site at your own risk. To the extent permitted by applicable law, Rita Naboni Romanillo accepts no liability for loss or damage arising from:

  • Decisions taken on the basis of the content published, including decisions about food or health.
  • Errors, omissions, typos or information that has become outdated.
  • Changes made by venues, businesses or public authorities after publication.
  • Services contracted with third parties, even where they were reached from this site.

This limitation does not exclude any liability that cannot lawfully be excluded, including liability arising from wilful misconduct or gross negligence and the statutory rights granted to consumers under Spanish law.

10. Help us keep this accurate

If you spot anything incorrect, outdated or potentially misleading — especially where it could affect the safety of someone with celiac disease — we would be very grateful if you wrote to us at info@glutendtrotters.com. We review and correct as quickly as we can.
