Ingredients
- 1 plain or lemon yogurt (125 g)
- 3 eggs
- 1 yogurt cup measure of mild olive oil
- 75 g date paste
- 3 yogurt cup measures of gluten-free flour (you can use a commercial blend like Schär or a combination of rice and almond flour)
- 1 sachet of gluten-free baking powder (about 10 g)
- Zest of 1 lemon (optional)
- 1 teaspoon vanilla extract (optional)
Preparation
- Preheat the oven to 180°C (top and bottom heat, no fan).
- Beat the eggs with the date paste until the mixture is frothy.
- Add the yogurt and oil, mix well.
- Gradually fold in the sifted flour with the baking powder, mixing with enveloping motions.
- Add the lemon zest and vanilla, if you choose to use them.
- Pour the mixture into a greased pan and bake for 35-40 minutes or until a toothpick inserted comes out clean.
- Let cool on a wire rack before unmolding.
