If you are looking for a light, quick, and delicious option, this konjac pasta stir-fry with shrimp recipe is perfect. Konjac pasta, low in calories and carbohydrates, is ideal for those who want to enjoy a tasty meal without compromising their health goals. Furthermore, it is an excellent alternative for those following a gluten-free diet.
We recently told you about our visit to Chef Bosquet‘s restaurant in Bilbao, Naked & Sated. It was a true discovery. Every dish was an experience in itself, but we weren’t satisfied with just tasting them. We wanted to bring that flavor into our own kitchen!

While looking for options to put into practice and share with you, we found this incredible pasta, which is also super healthy and very quick to prepare. Good thing we aren’t cats! Because if curiosity killed the cat, Manuel and I would have been long gone by now! This pasta with the impossible name is perfect for preparing a complete, light, and guilt-free dinner. And the best part: it’s gluten-free!
Ingredients (for 2 people)
- 200 g of konjac pasta
- 200 g of peeled shrimp
- 1 red bell pepper
- 1 medium onion
- 1 clove of garlic
- 1 teaspoon of sweet paprika
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
1. Prepare the vegetables: Cut the red pepper and onion into thin strips, and mince the garlic into small pieces.
2. Cook the shrimp: In a wok or large skillet, heat a tablespoon of olive oil over medium heat. Add the shrimp and sauté for 2-3 minutes, until they turn pink. Remove them from the wok and set aside.

3. Sauté the vegetables: In the same skillet, add another tablespoon of olive oil. Add the minced garlic, onion, and pepper. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
4. Add the konjac pasta: While the vegetables are cooking, rinse the konjac pasta well under cold water to remove its characteristic odor. Drain it and add it to the wok with the vegetables. Cook everything together for 2 minutes, stirring well to combine the flavors.

5. Season: Add the sweet paprika, salt, and pepper to taste. Stir so the paprika is well incorporated. Add the shrimp back in and cook for a couple more minutes.



6. Serve: Remove from heat and serve immediately. If you like, garnish with fresh parsley for a final touch of color and flavor.
And that’s it! In less than 20 minutes, you will have a light, nutritious dish full of flavor. Ideal for a quick weeknight dinner or to surprise your guests with a healthy, gluten-free option.
