Ingredients
- 1 apple
- 100 g of 85% chocolate
- 50 g of 70% chocolate powder
- 15 g of butter
- 100 g of date paste
- 2 tablespoons of EVOO (extra virgin olive oil)
- 2 eggs
- 40 g of almond flour
- 40 g of gluten-free baking mix
- 1/2 sachet of baking powder (gluten-free)
- Walnuts to taste
Step-by-step preparation
- Preheat the oven to 180°C. Prepare a baking pan by lining it with parchment paper or greasing it with a little EVOO.
- Cook the apple: Peel and cut the apple into small pieces. Heat in a saucepan over medium heat for 5 minutes to soften.
- Melt the chocolate: Mix the 85% and 70% chocolate with the butter. Melt in a double boiler or in the microwave at short intervals, stirring until you get a homogeneous mixture.
- Combine the wet ingredients:
- Add the date paste, two tablespoons of EVOO, and the two eggs to the melted chocolate mixture. Stir well until combined.
- Then, add the cooked apple and mix again until everything is homogeneous.
- Prepare the dry mixture: In a separate bowl, combine the almond flour, gluten-free baking mix, and baking powder. Gradually add this dry mixture to the wet preparation, stirring until you get a uniform dough.
- Add the walnuts: Chop the walnuts and add them to the dough, reserving some for decoration if you wish.
- Pour the batter into the pan: Spread the batter evenly in the prepared pan and smooth the surface. Decorate with the reserved walnuts.
- Bake: Place the pan in the oven and bake for 15-20 minutes. Check with a toothpick: it should come out slightly moist for a fudgy brownie.
- Let cool: Once out of the oven, let the brownie cool before unmolding and cutting it into portions.
