Gluten-free brownie with walnuts

Ingredients

  • 1 apple
  • 100 g of 85% chocolate
  • 50 g of 70% chocolate powder
  • 15 g of butter
  • 100 g of date paste
  • 2 tablespoons of EVOO (extra virgin olive oil)
  • 2 eggs
  • 40 g of almond flour
  • 40 g of gluten-free baking mix
  • 1/2 sachet of baking powder (gluten-free)
  • Walnuts to taste

Step-by-step preparation

  • Preheat the oven to 180°C. Prepare a baking pan by lining it with parchment paper or greasing it with a little EVOO.
  • Cook the apple: Peel and cut the apple into small pieces. Heat in a saucepan over medium heat for 5 minutes to soften.
  • Melt the chocolate: Mix the 85% and 70% chocolate with the butter. Melt in a double boiler or in the microwave at short intervals, stirring until you get a homogeneous mixture.
  • Combine the wet ingredients:
    • Add the date paste, two tablespoons of EVOO, and the two eggs to the melted chocolate mixture. Stir well until combined.
    • Then, add the cooked apple and mix again until everything is homogeneous.
  • Prepare the dry mixture: In a separate bowl, combine the almond flour, gluten-free baking mix, and baking powder. Gradually add this dry mixture to the wet preparation, stirring until you get a uniform dough.
  • Add the walnuts: Chop the walnuts and add them to the dough, reserving some for decoration if you wish.
  • Pour the batter into the pan: Spread the batter evenly in the prepared pan and smooth the surface. Decorate with the reserved walnuts.
  • Bake: Place the pan in the oven and bake for 15-20 minutes. Check with a toothpick: it should come out slightly moist for a fudgy brownie.
  • Let cool: Once out of the oven, let the brownie cool before unmolding and cutting it into portions.

Tips

  • If you prefer a sweeter taste, you can increase the amount of date paste or use chocolate with a lower cocoa percentage.
  • Serve this brownie with a scoop of gluten-free ice cream or a dollop of whipped cream for an extra touch.

And voilà! You now have a gluten-free, refined sugar-free, and absolutely delicious brownie, perfect for sharing on any occasion. Its moist texture, intense chocolate flavor, and crunchy walnuts make it an irresistible dessert for the whole family.
