Preparation
Prepare the Blondie Batter:
- Preheat the oven to 180°C (350°F) and prepare a small pan (approx. 20×15 cm) by lining it with parchment paper or lightly greasing it.
- In a bowl, mash the ripe bananas with a fork until you get a smooth purée.
- Add the eggs, vanilla extract, and peanut butter to the banana purée. Mix well until completely combined.
- In another bowl, mix the oat and almond flours, cinnamon, and a pinch of salt (optional). Incorporate these ingredients into the previous bowl until you get a homogeneous batter.
- If desired, add the chopped pistachios to the batter or save them for decorating at the end.
- Pour the batter into the prepared pan and smooth it with a spatula to make it even.
Bake:
- Bake for 20 minutes (depending on your oven, it may vary by a couple of minutes up or down) or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool completely before unmolding.
Prepare the frosting:
- Using a food processor, blend the ripe banana, oat milk, and cream cheese until you get a smooth and homogeneous cream.
- If you prefer a thicker frosting, you can reduce the amount of oat milk or add more cream cheese.
Assemble the Blondie:
- Once the Blondie is cool, spread the banana frosting evenly over the top.
- Decorate with chopped pistachios or any other topping you like (such as banana slices, more peanut butter, or gluten-free chocolate).

Serve:
- Cut into portions and serve. Enjoy your gluten-free banana and peanut butter Blondie!
Additional Tips
- The peanut butter will give it a more intense flavor and a creamy touch. If you prefer a milder taste, you can reduce the amount.
- If you want to enhance the peanut flavor, you can add chopped roasted peanuts to the batter or as a decoration instead of pistachios.
- If you don’t have peanut butter, you can substitute it with another nut butter, such as almond or cashew.
