If you are looking for a quick, healthy, and gluten-free dinner that the whole family will love, these zucchini rolls with Iberian ham and melted cheese are going to be your new favorite. They are easy to prepare, packed with flavor, and are a delicious way to incorporate vegetables without the kids complaining.
At home, we always try to include vegetables in every meal in a creative and tasty way, and this recipe has been a complete success! Inspired by a version by Chef Bosquet, we have created our own adaptation, and we couldn’t wait to share it with the entire Glutendtrotter community.

Ingredients (2-3 people)
- 1 large zucchini
- 3 eggs
- 100 g of Iberian ham (or cooked ham, to taste)
- 150 g of 4-cheese shredded blend (some for the inside and some for gratinating)
- Salt and pepper to taste
- A drizzle of extra virgin olive oil
- Parchment paper for baking
Step-by-step
- Preheat the oven to 180 °C (350 °F) with top and bottom heat.
- Wash and slice the zucchini into very thin strips using a mandoline.
- Place the strips on a baking sheet lined with parchment paper, slightly overlapping them to form a base. Season with salt and pepper to taste.
- Beat the eggs and pour them over the zucchini. Ensure it is evenly distributed.
- Bake for 10-12 minutes, until the egg is set.
- Remove from the oven and place a layer of Iberian ham followed by half of the shredded cheese.
- Roll carefully, using the parchment paper to help, just like a Swiss roll.
- Sprinkle the rest of the shredded cheese on top and bake for another 5-7 minutes, until the cheese is melted and slightly golden.
- Let it rest for a couple of minutes, cut into portions, and… enjoy!


💡 Extra tip
This dish is ideal for little ones and a great way to incorporate vegetables into the daily menu. You can also prepare it in advance and give it a final blast in the oven just before serving.
