Do you usually wait for the weekend to enjoy a special breakfast? No need to wait any longer! These gluten-free pancakes with almond flour and date paste are one of our favorite recipes to start the day with energy. They are so easy to prepare that you can have the batter ready in the fridge and make them any day of the week.

Ingredients
- 200 g Schär gluten-free flour
- 30 g almond flour
- 1 tablespoon gluten-free baking powder
- 30 g melted butter
- 300 ml oat milk (you can substitute with another plant-based drink you like)
- 1 tablespoon date paste
- 2 eggs
- A few drops of vanilla extract
- A pinch of salt
- Oil or butter for cooking
Instructions
1. Mix the dry ingredients: In a large bowl, combine the Schär gluten-free flour, almond flour, baking powder, and pinch of salt.
2. Prepare the wet ingredients: In another bowl, beat the eggs and add the oat milk, date paste, melted butter, and vanilla extract. Whisk well until all ingredients are combined.
3. Combine: Pour the wet mixture into the bowl with the dry ingredients, mixing gently until you get a smooth batter. Do not overmix to keep the pancakes fluffy.
4. Cook: Heat a non-stick pan over medium heat and lightly grease it with oil or butter – in my opinion, butter adds a sublime touch. Pour some of the batter into the pan, forming pancakes of your preferred size. Cook until bubbles appear on the surface, then flip and cook until golden brown on both sides.
5. Serve: Serve the pancakes warm and accompany them with your favorite toppings, such as fresh fruit, nuts, maple syrup, or more date paste.
