Do you find it challenging to eat a varied diet at home? Do you want to introduce vegetables appealingly into your dishes? At Glutendtrotters, in addition to sharing 100% gluten-free recipes, we always look for a creative and delicious way to integrate vegetables into daily life.

We know that for many children (and also for some adults) it can be a challenge to eat them, but with a little imagination, everything changes. These gluten-free broccoli gnocchi are the perfect proof: soft, flavorful, and accompanied by an irresistible homemade tomato sauce with chickpeas. An easy, nutritious, and family-friendly recipe.

Ingredients

For the gnocchi:

  • 250 g cooked broccoli (well drained)
  • 100 g almond flour
  • 100 g gluten-free flour mix (adjust if necessary)
  • 2 eggs
  • 1 tablespoon extra virgin olive oil
  • Salt to taste

For the accompaniment:

  • 200 g cooked chickpeas (canned ones are fine, well rinsed)
  • 250 g homemade tomato sauce
  • A few fresh basil leaves
  • A drizzle of extra virgin olive oil (for the finishing touch)

Preparation:

Prepare the gnocchi

  • Cook the broccoli until tender, drain it well, and mash it.
  • In a bowl, mix the broccoli with the eggs, flours, oil, and salt until a soft but firm dough forms.
  • Divide the dough into portions and form cylinders. Cut them into pieces approximately 2 cm long and, if desired, make the classic fork marks. I chose to make small balls using two coffee spoons, an easy and quick option.

Cook the gnocchi

  • Boil plenty of salted water and cook the gnocchi in small batches. When they float to the surface, leave them for 1 more minute and remove them with a slotted spoon. Do not overcook them so they don’t fall apart.

Prepare the accompaniment

  • Gently heat the previously prepared homemade tomato sauce over low heat. Add the cooked chickpeas and let them combine well for 5 minutes.

Assemble the dish

  • Serve the gnocchi with the chickpea and tomato sauce mixture on top.
  • Garnish with fresh basil leaves and a drizzle of olive oil before serving.

👉 Tip: If you want an extra touch, you can sauté the cooked gnocchi in a pan with a little olive oil until they are golden brown.
