Preparation

Prepare the Blondie Batter:

  1. Preheat the oven to 180°C (350°F) and prepare a small pan (approx. 20×15 cm) by lining it with parchment paper or lightly greasing it.
  2. In a bowl, mash the ripe bananas with a fork until you get a smooth purée.
  3. Add the eggs, vanilla extract, and peanut butter to the banana purée. Mix well until completely combined.
  4. In another bowl, mix the oat and almond flours, cinnamon, and a pinch of salt (optional). Incorporate these ingredients into the previous bowl until you get a homogeneous batter.
  5. If desired, add the chopped pistachios to the batter or save them for decorating at the end.
  6. Pour the batter into the prepared pan and smooth it with a spatula to make it even.

Bake:

  1. Bake for 20 minutes (depending on your oven, it may vary by a couple of minutes up or down) or until a toothpick inserted into the center comes out clean.
  2. Remove from the oven and let cool completely before unmolding.

Prepare the frosting:

  1. Using a food processor, blend the ripe banana, oat milk, and cream cheese until you get a smooth and homogeneous cream.
  2. If you prefer a thicker frosting, you can reduce the amount of oat milk or add more cream cheese.

Assemble the Blondie:

  1. Once the Blondie is cool, spread the banana frosting evenly over the top.
  2. Decorate with chopped pistachios or any other topping you like (such as banana slices, more peanut butter, or gluten-free chocolate).

Serve:

  1. Cut into portions and serve. Enjoy your gluten-free banana and peanut butter Blondie!

Additional Tips

  • The peanut butter will give it a more intense flavor and a creamy touch. If you prefer a milder taste, you can reduce the amount.
  • If you want to enhance the peanut flavor, you can add chopped roasted peanuts to the batter or as a decoration instead of pistachios.
  • If you don’t have peanut butter, you can substitute it with another nut butter, such as almond or cashew.
