Gluten-Free Carrot Cake Recipe: Chef Bosquet Inspired

We recently had the opportunity to visit Naked & Sated in Bilbao, the famous restaurant by Chef Bosquet, where we were able to enjoy a delicious and healthy meal. We were so inspired by their philosophy of natural, unprocessed cooking that we decided to recreate one of their most iconic recipes at home: gluten-free carrot cake.

This version of the carrot cake is a perfect balance between flavor and health, made with natural ingredients, gluten-free and without refined sugar. It is an ideal recipe for those looking to enjoy a classic dessert, but in its healthiest version.

Ingredients

For the cake:

– 300 g of grated carrots

– 120 g of ground almonds or almond flour

– 4 eggs

– 80 g of date paste

– 1 sachet of baking powder

– 50 g of ground pistachios

– 80 g of chopped dates

– Cinnamon and ginger to taste

For the topping:

– 100 g of Greek or plant-based yogurt

– 50 g of mascarpone cream cheese (or plant-based cream cheese for a vegan version)

– Assorted nuts (optional)

Preparation

1. Preheat the oven:

  • Preheat the oven to 180°C and prepare a springform pan with parchment paper.

2. Prepare the cake batter:

  • In a large bowl, mix the grated carrots and ground almond.
  • Add the eggs, date paste, cinnamon, ginger, baking powder, and ground pistachios.
  • Mix well until you have a smooth batter and add the chopped dates.

3. Bake:

  • Pour the mixture into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan before unmolding.

4. Prepare the topping:

  • While the cake is cooling, whisk the cream cheese with the yogurt until you get a smooth and creamy consistency.
  • Once the cake is cool, cover the top with the cream cheese frosting. Decorate with assorted nuts if desired.

5. Serve and enjoy:

Serve the carrot cake and enjoy this delicious and healthy dessert inspired by Chef Bosquet.

6. Our version:

In our version, we substituted the raisins from the original recipe with chopped dates, although both options are valid. Also, we noticed the topping could be a bit more flavorful, so next time we will add a little date paste to sweeten it.
